One of my favorite dishes at Dreams Puerto Vallarta is the resort’s shrimp cocktail. It doesn’t get much better than fresh shrimp with avocados, cucumbers, cilantro and more! I was able to score the recipe from one of the chefs at the resort on my last visit and wanted to share my bounty with all of you so you can create this delicious treat at home.
In shrimp cocktail, the shrimp is the main attraction so make sure you start the recipe with fresh, fully cooked, cleaned and deveined medium shrimp. Now it’s time to make the delicious Mexican style cocktail sauce. In a large bowl combine one 16 ounce bottle of Clamato, four large avocados diced, two large cucumbers seeded and diced, ½ cup of cilantro finely chopped, ½ cup of onion diced, ¼ cup of chopped celery, ½ cup of freshly squeezed lime juice, one to two tablespoons of hot sauce and salt a pepper to taste. Once all of our cocktail sauce ingredients are thoroughly combined, ladle ½ cup of the sauce into a margarita glass. Hang four to eight of your cooked shrimp around the rim of the glass and serve with a few homemade tortilla chips.
