Happy National Taco Day! To celebrate our favorite Mexican dish, we’re making fish tacos straight from the kitchens of Dreams Resorts & Spas. And because we want you to get in on the action too, we’re giving you the recipes that your favorite Dreams Resort chefs use. Go ahead! Cook your fish, assemble your tacos and imagine you’re on the beach. Sounds like a perfect National Taco Day to us!
And, to make these tacos extra authentic and have a little zip, you can make some salsa verde too.
1 lb fresh fish fillets (Cod, Mahi Mahi or any other white fish)
Salt and Pepper
1 dozen corn tortillas
Salsa (homemade or store bought)
What to do:
Soak the fish in cold water for one minute then pat dry with a paper towel. Add a few tablespoons of olive oil to a large skillet and cook the fish on medium heat. The fish should be barely translucent when cooked. Second, thinly slice the cabbage and avocado. Sprinkle the cabbage with cider vinegar and salt for flavor. Next, place the tortillas on a napkin or paper towel and heat them microwave on high for 20 to 25 seconds. This will absorb the moisture. Finally, assemble your tacos.
